Figs, figs and more figs! Our little fig tree has really over achieved this year! Big, fat, juicy green figs with the most succulent deep red interior. A true taste of summer. But we have sooo many! We have given figs to all the neighbors, I have made jam twice, we eat figs with the local jambon de Bayonne regularly.
Here is a quick and easy dessert using fresh figs, that bakes in the oven in just minutes, or, as I did, covered on the barbeque.
Ingredients:
- Figs
- Honey
- Butter
- Vanilla ice cream
Preparation:
- Wash, stem and halve the figs. Arrange cut side up in a baking dish. Drizzle with a spoon-full of honey – more or less depending on the sweetness of your figs. Top each half with a little bit of butter. If you like, add fresh hard herbs (rosemary or thyme) to the baking dish.
- Bake in a hot oven until very tender and the juices are running freely. Let cool 5 minutes.
- Spoon ice cream into individual bowls, spoon the figs around, don’t forget to spoon over their pan juices. Enjoy!
