Yakima tomatoes with fresh oregano, tapenade and hard cooked egg.
Sheeps milk bleu cheese from Ferme Kukulu with local figs and walnut marinated in honey.
Green lentil “tabouli” with mint, radishes, cucumber, red onion, golden raisins, cilantro, parsley and tahini vinaigrette.
Falafel served with a salad of arugula, summer melon, mint, honeyed yogurt and grilled wild gulf prawns.
Poached wild sockeye salmon on a warm salad of Yukon potatoes, curly endive, sweet corn and summer savory, with a sweet onion and black currant compote.
